What is the difference between "что это" and "что это такое?"

There're no difference. It's almost the same. But 'что это такое' can also express your astonishment, resentment or indignation. So it can make a phrase more emotional

"Что это?" = "What is this?"
"Что это такое?" = "What is this like?"
