what self employed is?
If I just run my own shop (a small shop), Can I tell you that I am a Self employed? Can I tell you that I am self employed by profession? What is the better call for that job?

self-employed is correct. It means you don't work for anyone else, but if you run a small shop, I would probably say "I am a small business owner."

If you run your own shop, you are self-employed. If you have your own business, you are self-employed. It means that you are your own boss or you employ yourself.
