can i say 'the office staff'?or 'office staffs' or ' office thaffs'?which on is ture?
but if i don't plus "s"at the end of the staff,why people say "the theaters"?and ,sometime the+XX is means one type of things like :the old ,how to distinguish them?

You say "the office staff". "Staff" is a collection of workers, so it's already a plural form (like people).

The correct one is "office staff."
I really don't understand your other questions though.
Staff is "uncountable".
