J'apprends or Je suis l'apprentissage?
When saying my reasons for learning French, should I say "J'apprends Français..." or "Je suis l'apprentissage Français"?
J'apprends le français pour... (verbe à l'infinitif) = things you want to do with French.
J'apprends le français parce que... (phrase avec un verbe conjugué) = reason(s) you are learning French. It's just a slight difference in the point of view.

You can say "J'apprends le français parce que..." :)

I believe you mean "Mes raisons pour apprendre le français" or, better yet, "la raison (or les raisons) que j'ai appris le français" which sounds more natural to me, even if the context changes slightly.

It's tricky but you have to say "j'apprends LE français" mais "je parle français" (no article in this case but it's an exception, not the rule. No capitals for languages in French.
