Somebody asked this same question a while ago, also including 'pottery' in the mix. Setting aside the technicalities, in everyday English it's a question of how fine or delicate the finished product is. Going from the coarsest to the most delicate the order is:
1. pottery
2. china
3. porcelain

China and porcelain use different techniques in manufacturing, but basically they are the same thing. They are both ceramics.
