Which of the 3 words should I use if I meant to say the "beef" part in beef burrito?

If you refer to the meat, we say "ternera"
for the animal (cow) we use the three ones

I think it depends on the country:
In Spain, "ternera", in Argentna "vaca", "res" in Mexico.

Varía según la costumbre del lugar donde te encuentres, pero las tres opciones son correctas. (En Argentina por ejemplo decimos "vaca")
