How would I say "To talk about something"?
What grammar structures could I use if I wanted to say I'm talking about something?
For instance, "We talked about cats today."
"In class, we talked about Japanese grammar."
Etc etc.

Hello.
You can say 「~について話す」 for that.
"We talked about cats today." 今日私たちは猫について話しました。」
"In class, we talked about Japanese grammar." 「私たちは授業で日本語の文法について話しました。」
