I always thought the two "i"'s flanking the word "talk" looked like two people. It always brought the idea of two people talking with each other in order to learn the language. Just my interpretation tho.

It doesn't mean anything. It's just a brand name, like Pepsi, that suggests certain ideas and associations, but doesn't have a meaning in itself. The 'talk' part, as you say, makes us thing about talking. The 'i' at the beginning makes us think of the internet and technology - like i-phone. And the 'i' at the end? Well, that just rounds it off and makes a nice fun-sounding word. It also stops it being an obviously English word. Because this is an international site, I'm sure the founders wanted to give it an international-sounding name that wasn't a word in any language.
