“A real nice one, too. Got your bikini, love? We can take down Sam Redwood again, that’s always fun.”
This is a conversation between one couple. They both hate Sam.

In this case, "take down" would mean to insult or speak poorly of Sam. So, they are going to make a video in which they discuss things they dislike about Sam, because they think it's fun.
