ça vient de la Bible où il est commandé de cultiver la terre pendant 6 ans et de la laiiser en repos la septième. C'est l'année du Sabbat, l'année sabbatique

There's the expression 'prendre une année de césure', which is the equivalent of a year out or gap year. Also 'une année sabbatique'.
