"How much rice do we have?" is correct. However, note that if you are speaking about varieties of rice like brown rice versus white rice, then you'd have to say "How many varieties of rice do we have?" The word "variety" acts as a counter here like the words "cup", "teaspoon", etc. and it is countable so it takes the word "many" instead. :)
