Basically - size between city, town, and village. What the difference is depends on the country you are asking about - and the rules that country uses to specify which is which. Perhaps what is a city in my country would only be a town in yours!
The country, and the countryside are very similar. It's just personal preference as to which to use. They refer to areas which are not in an urban (more heavily populated) area.
