日 is day にち can also be a counter for days and also sun ひ.
日曜 is Sunday にちよう.
日曜日 is also Sunday にちようび.
the difference between 日曜 and 日曜日 I'm afraid I don't know I always use 日曜日.

日 (ひ): sun; day.
日曜日 (にちよび): Sunday - 曜日(よび) means "day of the week".
日曜 (にちよ): Short form of 日曜日.
