As duas palavras traduzem "pessoa", eu posso usar qualquer uma? Qual seria a correta forma de aplicação?

We use normally use 'person' for one and people for more than one.

People = pessoas (plural)
Person = pessoa (singular)
One person. Two people.

Person - persona (1 man or 1 woman)
People - gente (a group of persons)
Por ejemplo:
Chinese people are so good - La gente china es muy buena
Fabio es una persona inteligente - Fabio is an intelligent person.
