What is different between "thank you very much" and "thank you so much" ?

Either is quite polite, although "so much" is more emphatic, as if the favour was unexpected. "very much" is probably safer for you in most situations.

I believe they are interchangable, just like in Italian. Grazie mille = Thanks 1000, Grazie tante = thanks a lot. No really big difference. :)

no real difference... "thank you very much" = "thank you so much"
