I am not a filipino but, as nobody else is answering your question, I will give you my take on this (please correct me, if I am wrong)
Paumanhin is the formal way of apologizing. (seldom used)
Patawad, i believe, is more like: Pardon me
Pasensya (pasensya na) is more commonly used (derives from the spanish paciencia (patience) (as in, be patient with me)
But at the end, most of the time the filipinos will say Sori
