Hollowed out “He was so close to me I could have touched him—he was beautiful in the flesh, hollowed out and coiled like a spring, nervous energy radiating off him. What's the meaning of " hollowed out"?

If something is hollow, it means it has nothing inside of it. It is hard to determine what is meant without seeing the rest of the text. It could mean he showed no emotion for example.
