What does hand-stoked mean? Modern boilers which employ solid fuels are usually too large to be hand-stoked, and stoking is then carried out by mechanical stokers, which ensure that an adequate quantity of fuel is conveyed into the furnace at the proper speed.

In this sentence, "to stoke" means "to put (fuel) in". So, "hand-stoked" means fuel being put in by hand. By hand = done directly by people, not machines.
