She sounds like Amy from the novel "Little Women". :) Anyway, injured sniff is a metaphor. It could mean she spoke and sounded a little hurt/tearful.

In this case, the language is meant to be descriptive in an artistic way rather than to be taken literally. The "sniff" refers to the fact that she has been crying. It is not literally injured. Rather, "injured" refers to her feelings that have led her to cry. She feels emotionally hurt (or injured) because of her feelings about the statement she has just made, and so she cries a little as she says it.
