I think you mean "I could use some time...." 
"Could use" is a polite way of saying "need."

Hi! The verb "to sort through" means to look through a bunch of things when you want to find something. For example:
1. I stayed up all night, sorting through my old letters. (I was looking through my old letters, trying to find something)
But the verb "sort out" means to solve, so in your sentence, I think "sort out" would be appropriate.
