越A越B - the more A the more B?
I am trying to understand this structure: 越A越B
E.g.
这本书我越看月爱看 - the more I read this book the more I enjoy reading it
越无聊越吃东西 - the more bored I get the more I eat
Is that correct? Thanks!

这本书我越看越爱看。or 这本书我越看越喜欢。
越觉得无聊我吃东西越多。or 我越觉得无聊吃东西就越多。

这本书我越看[月]爱看 - the more I read this book the more I enjoy reading it :it's correct except “月” should be“ 越”
越无聊越吃东西 - the more bored I get the more I eat:it's correct. But I think it will be complete 越(觉得)无聊越吃东西
越A越B - the more A the more B:for logic, it‘s correct
Usually A is a verb like the 1st example above. eg 越走越远,越跑越快,越飞越高
PS: there is another phrase: 越来越C-just means more and more C
for eg, 月亮越来越圆 means moon gets round and rounder

Perfect understanding and sentence making.
By the way, why have not you said ' the more bord the more I get to eat'? Is there anything different in meaning or style?

I see nothing wrong with your sentences except for a typo in the first one.
