This survey will help us to create new workshops and dance classes tailored on what you want.

I would say:
"This survey will help us create new workshops and dance classes tailored to what you want"
You can say "help us to create," but I think it sounds more natural if you say "help us create."
We never say "tailored on," but rather "tailored to."
Additionally, instead of "tailored to what you want," you could also say "tailored to your preference." I will leave that up to you, however. Everything else is well written. :D
