Hi, there
In the book Anmial Farm I read "Nearly the whole of the produce of our labor is stolen from us by humans". Couldn't you replace the whole of the produce" with "All the produce"? Would it be wrong to say "Nearly all the produce of our labour is stolen from us"?

You are correct. Orwell is just using creative prose to say the way that he wished to. Your versions work just as well and have the same meaning.

Não é errado não, continuará com o mesmo sentido. É como substituir "O Pedro, a maria e o joão vão correr" por "Eles vão correr", apesar de diferentes frases, o sentido não muda, entende? Dei um exemplo nada a ver só pra facilitar sua vida mesmo :)
