Pronouncing the final -s in Greek names
Do you never pronounce the letter -s at the end of Greek names (such as Panos, Dimitris etc.) or is it optional?

It is not optional. We have to pronounce s in the nominative case. However, in accusative case there is no s, so we don't pronounce any s.
