Hi,
I read this term 'unstuffy hotels' on one of the sites.
What does the unstuffy adjective mean here?

It means having a relaxed and informal atmosphere. A person or place is “stuffy” if they are very formal, serious, and un-fun. “Unstuffy” is the opposite of that.

Just a small additional comment - I would say 'on a site' instead of 'on one of the sites', because you haven't talked to us about these sites previously.
