Coinky is not a word. Coinkydink is a slang word that means "coincidence". Are you sure you didn't mean "It was a very chance encounter with someone."? That would mean that the encounter was not planned and happened without any prediction.

I don't know about other countries, but I live in the U.S. and I have never heard "coinky".

Maybe the place where you saw this word contained a spelling error, and it should have said something different? Jordan is right -- "coinky" is not a word in English.
