Hi Cathy,
To "culture"means to grow or cultivate something.
A cultured food is a food that has been fermented. Something that causes fermentation such as yeast, bacterium, or mold is added to a raw food like milk or soybeans. After careful cultivation of this raw food, the result is a "cultured food".
The following is a small list of some common cultured foods.
Yoghurt
Miso
Tofu
Tempeh
Buttermilk
Sourcream
Cheese (my favorite cheese is French Camembert mmmm)
Sauerkraut

Cultured foods also include kim chee and kefir but other foods can be cultured, including soybeans, eggplant, cucumbers, and turnips. In different cultures, whatever vegetable is in season is used for culturing.
The two primary reasons why cultured foods need to be a part of one’s diet are: 1) to provide that complete stimulation for the taste buds, and 2) to support the microbial flora in the intestinal tract.
