Estou muito cansado.=I am much/very tired. (Saying a fact objectively.)
Estou tão cansado.=I am so tired. (Saying the fact emotionally.)
Eu estou tão cansado (que não consigo trabalhar). I am so tired (that I cannot work).

When you say 'tão', you make people imagine the consequences of that, because you omit the second part of the sentence.
