yes, you can. You don't really need to include the word 'something'. You would most likely use a sentence like this in response to someone else saying that they found something impressive. If you just wanted to say that something is unimpressive, you could also say - I am not impressed.

Yes you may🙂. You could also word it this way:
It/he/she does not strike me as being impressive. Or the impressive type.
