How does Word Order in German phrases make emphasis in certain words? Please give examples.

Usually, German tries to put the phrase at the beginning for emphasis. For example,
Ich weiss das nicht. = I do not know that.
However,
Das weiss ich nicht. = That (one/thing/matter), I do not know.
[i.e., "das" is emphasized through word order.]
Good day. / Schönen Tag.
