I think maybe 我对知识有一种难以抑制的渴望 is the best one. The counter 个 is not suitable here, 一种is a better counter.

you can say 我对知识有 一种 难以抑制的渴望。
you also can say 我对知识如饥似渴。
“如饥似渴”is an idiom, an ancient chinese remark.

最自然的说法是“我对知识有（一种）难以抑制的渴望I ”
另外两种说法属于倒装句，也可以用。
加上“一种”感觉更好一点。
