Echo,
For "I am doing great", you can say "Me va muy bien/estupendamente" or "Me va chachi" , or even "Me va chachi-piruli" (the latter two only in a very informal conversation between youngish people! :-)). For "I am fine", you can say "Estoy bien" (= No me pasa nada, estoy normal), or, if "I am fine" is used as a way to refuse another drink, you can say "Para mí nada, gracias" or "Yo ya no [quiero], gracias".
