is it correct to say in order to ask "what day of the week is today?"
I want to be able to ask "what day of the week is today?", "what day of the week was yesterday?". Is it correct to say in Persian or do I have to say
Thank you in advance for your time and help.

You need to add "از" after روز which represents exactly the equivalent of "day of" in your second sentences, so they'll be like: امروز چه روز از هفته است؟ . These sentences are correct and everyone will definitely understand you, but they're not common at all.
Your first sentences, امروز چند شنبه است؟ are totally correct and common.

First versions are correct.. :)
