I’m sorry but you can’t say 「ハイキングをしました」. I like Judy-san’s idea of combining 2 sentences to 1 by inserting 「初めて」in the first sentence. I have to say, however, 「ハイキングをしました」sounds more annoying than repeating 「行きました」in a row.

昨日私は初めてハイキングをしました。 天気はすごく良かったです。

昨日、私はハイキングに行きました。初めて行きました。 天気はすごく良かったです。
