Which would be the correct way to write "I want to eat *this* sushi." (emphasis on "this")? Please explain why.:

이거 is colloquial form of 이것 and means "this one"
이거 초밥 is not grammatically correct.
이 초밥 just means "this sushi"
이는 초밥 is not grammatically correct.
If you want to emphasis on "this", you can use 바로.
바로 이 초밥 먹고 싶어요.
