I assume this is a story that already happened, so the verbs need to be conjugated in the past tense. Here are some corrections:

Mi día!

Hoy comí (past tense of comer) el desayuno con un (with A new friend) nuevo amigo. Nosotros bebimos (past tense of beber) café sin leche y azúcar. Me gustan (plural) los panqueques, y a él le gustan los huevos (There's a couple of things here that need a deeper explaning that what I can write in here). Después de comer , nosotros caminamos alrededor del ("de el" parque contracts into " del") parque. Nosotros vimos (past tense) perros, pero no gatos.

Hoy como desayuno con un/mi nuevo amigo. Nosotros bebemos cafe sin leche solo y azucar. A mi me gustan los panqueques, y a el le gustan los huevos. Despues de comer comiendo, nosotros caminamos alrededor del parque. Nosotros veemos perros, pero no gatos.
