Hey! I understand using a reflixive like me lavo or me ducho, but what does it mean if someone uses " me voy" instead of just "voy"? or if i say "comi los enchiladas vs me comi los enchiladas? is it only emphasis?

The main difference is that if you say just "VOY" means that you go somewhere, but if you say "ME VOY" means you are leaving from somewhere.

On the other hand, "ENCHILADAS" is femenin so you have to say "LAS enchiladas" no "LOS". However in these sentences the commun thing to say is: "Comí enchiladas" (without the article LAS) that means you ate enchiladas in the past. "Me comí las enchiladas" means that you ate the enchiladas that you had, specific ones.

Hola, cuando incluyes el pronombre como "me" lo que haces es hacer indicar quien realiza la acción ya que existen verbos como pintar, lastimar, quemar, entre otros, los cuales requieren del sujeto. Por ejemplo, "me pinte la cara", da a entender que te pintaste la cara. Pero si dices," pinte la cara", no sabemos si fue tu cara o la de otra persona. Por eso es necesario incluir el sujeto "me". 
Existen pocos casos como "voy", en que el significado va a ser el mismo; "me voy" o "voy". Nada que la practica no pueda vencer.
