"Gut" is a verb here which means to remove the innards (the insides or organs) of animals.
Think of someone gutting a fish: one knife slice and out come the insides! That is what she wants to do to her husband when they divorce. It's a figure of speech here, she won't literally kill him, she just wants to cause him a lot of pain.
