The original text is somewhat unnatural.
[the author is apparently referring to an interesting poem]
And, of course, there's the subject matter. It interests me just as it would if the same subject was explored in a story or essay. Not all poets interest me in this way, but then not all stories and essays do, either.
[The author says that it is the subject that interests him and the subject interests him in this poem and the subject would interest him if he encountered it in a story or an essay. The author then says that not all poets interest him just as not all stories and not all essays interest him. Not all = zero or some, but not all; some is the normal interpretation; zero would normally be described using "none of the stories and none of the essays interest him").
Question: What can we inform (DEDUCE/INFER) from the text?(inform is unnatural here )

The answer is not A
[More natural, more clear would be "the author dislikes all the essays" or "the author likes none of the essays" because "the author doesn't like all the essays" is ambigous ... does it mean he likes some essays but not all or does it mean he likes none of the essays?]

Hard to say without context, but my guess is it is short for “I don’t like exams that consist of all essay questions”. I can imagine students using that kind of short phrase in informal conversation. Students talk about such things all the time, so there’s not point in using the full, grammatically correct sentence.
