Phoebe: Okay, well they are a huge responsibility, especially at this age. They require constant care. They-they need just the right food, and lot's and lot's of love.
Joey: Oh, well no problem there. (He picks up the chick, hugs it really tight, and talks to it like it's a little baby.)
Chandler: Easy 【Lenny】.

I believe Zean is right. Here’s one more thing that adds to the joke: In Of Mice and Men, Lenny was a man of very low intelligence. In Friends, Joey is dumb and the show makes a lot of jokes about him being dumb. So, by calling Joey “Lenny,” Chandler is not just referring to Joey holding the chick too tightly, he is teasing Joey for being dumb.

Lenny is a character in John Steinbeck's classic novel, Of Mice and Men. Lenny held a small animal too tightly and killed it accidentally.
It sounds like a horrific reference, and not funny at all. But humour is not something that can be explained. In this conversation, it is funny because of its unexpected reference. After all, that's what humour is: unexpected and sudden shift in perspective.

It's absolutely an "Of Mice and Men" reference. Chandler's comparing Joey to that character.
