It is a bit hard for foreigners to directly type Traditional Chinese before they learn how to write Chinese characters... Hong Kong people use a kind of typing system called 倉頡, and it is all about shapes and strokes of Chinese characters instead of pinyin (about sound).

Cantonese and Mandarin are  of  Chinese, but the input method is different. Try to install Cantonese input method, use the Google search for "Cantonese Input Method"
