Is this sentence correct? I use "that" twice which sounds a bit awkward. How can I make it better and sound more natural? "There is one interesting thing that happened this weekend that I would like to share with you."

You can remove the second “that”. The sentence still works grammatically and logically without it, and omitting it would prevent that repetition.

This looks great! You could rephrase it to say something like “I want to share something interesting that happened this weekend”. Your sentence looks great! This is just a way to make it a little less formal.

It is correct, but you are right, somewhat awkward. You can simply remove unnecessary words and the sentence will read better: "An interesting thing happened this weekend that I would like to share with you."
