Today I ate Kimchijjigae for breakfast. I cooked it with Kimchi made a year ago. It was really awesome. Kimchi always tastes good. I mean, it tastes good right after it is made, and it also tastes good after it has fermented. Every winter, Koreans make enough Kimchi to eat for an entire year. So, generally, they can enjoy it after it’s fermented one year. But, as you may know, some restaurants serve food cooked from Kimchi that has fermented as many as 10 years.
