Why do we say Preferisco telefonare <em>che</em> scrivere instead of <em>di</em> scrivere? I'm confused since telefonare and scrivere are not adjectives...

in realtà è un'abbreviazione.
SI dovrebbe dire "preferisco telefonare piuttosto che scrivere". Nel linguaggio comune diciamo "preferisco telefonare che scrivere".

We use "a" to compare two names (preferisco il bianco al nero; preferisco Marco a Giuseppe). But we have to use "che" to compare two verbs (preferisco scrivere che telefonare = preferisco scrivere piuttosto che telefonare = preferisco scrivere anziché telefonare).

Hai ragione, la frase grammaticalmente corretta sarebbe: preferisco telefonare di scrivere.
Ma spesso, nella lingua parlata si sostituisce "che" a "di" perchè si abbreviata quella che dovrebbe essere: preferisco telefonare invece che scrivere.
