Does "thanking you" is really exist in Grammar? [OR: Is "thanking you" grammatically correct?]

I saw it in an e-mail at work.
One of my customers said "thanking you" in the letter message. [You could also say: in the email]
I'm curious about it. Is it correct? Can I use it? This is just the first time to I've seen it.

Was your customer Australian? We never say this in Britain (and I've never heard an American say it too), but I did hear it a few times when I was in Australia when I was working in a bar (they'd say "thanking you" when I served them a drink). But even in Australia it doesn't seem very common. Probably best to avoid the phrase.
