What is the difference between 여기 and 이리?
i hear 이리와 a lot. Can you also say 여기와? Are they always interchangeable?

No, You can't. ^^
"여기와" should be "여기로 와", and both "여기로 와" and "이리와" are interchangeable but "이리와" is much more natural and commonly used in conversation.
In terms of grammar, "여기" is a pronoun and "이리" is an adverb.
I was born and live in Seoul, I prefer to use "일루와", which is known as a dialect, rather than "이리와".
*여기 = 이리
여기+로 = 이리+로(=이쪽+으로) ((으)로 - direction marker^^)
여기로 와 = 이리로 와 = 이리와(short form)
Also these phrases are quite casual.
Here are polite ones,
이쪽으로 오세요(more often used in conversation)
여기로 오세요.(seldom used)

Actually "이리" has a sense of direction in it, so we can say
"이리(로)" = "여기로"
"이리" means to be "in the direction of the place which you are in" while "여기" is more like just "the place where you are"

이리로 와서 합석하는게 어때요?(O)
여기로 와서 합석하는게 어때요?(O)
8.He will be here in a minute.
그는 곧 이리(로)(=여기로) 올겁니다.

이리 means 'this direction'(the direction where you are), 여기 means 'here', the place where you are. So 이리 is less specific. If your friend ask you where you are and you reply "이리", you won't be understood.
