1. No.^^/ It should be "문을 여세요" not "문을 열으세요"^^/
As you said, "-으세요" is used for verb stems with 받침 except for "ㄹ" 받침 like 열다.
2. 뜯다 = to rip open
곳 = a place, part
뜯는 곳 = the part where you can rip open packages or wrappers.
