Only capitalize the word following the colon if it is the beginning of a full sentence, and is followed by another full sentence. Example:
She wanted to know a couple of things: How old was I? Where was I born?
If the phrase following a colon is not a full sentence, then we don't capitalize it. Example:
For Thanksgiving dinner, his grandmother served: turkey with stuffing, mashed potatoes, corn, beans, bread and apple pie.
