Now he looks at me the way Houdini studied a box to learn the way out, then smiled and let himself be manacled.

I think it means to slide (/sidle /wiggle /bend /curve) out of the chains. To 'slide out', like a snake would do.

According to the context, the charachter "unsnaked" the chains means that he removed and released himself from the chains.
As the chains around his body look like a coiled snake, removing them could be compared to removing that snake-looking thing => therefore un-snaking the chains.

Momo, this story has a lot of stuff going on, which makes clarifying "unsnaked" a little difficult.
" Unsnaked the chains....." just seems awkward. It seems to me that the person talking is describing giving birth. "Unsnake" generally means to untangle, like Aisha has already said. I think in this case it might be used to present the reader with a mental image of an umbilical cord.
