"Make noise" can be used in a negative command, such as "don't make any noise!" if you do not want to disturb someone. The "noise" in this phrase can refer to anything that is audible: footsteps, leaves crunching, talking, etc. "If you want to sneak up on someone, don't make noise." "Make noises" is different. It's used to announce or describe a specific instance of noises that are usually nondescript and otherwise difficult to describe. "I was hungry, so my stomach made noises." "The clown honked his horn and made other noises." Hope that helps! Good question!

Noise can be a countable and uncountable noun. You are making too much noise. My car is making strange noises.
